Mapled pancakes with organic bacon recipe
Ingredients
2 cups self-raising flour
1/2 tsp bicarbonate of soda
1 1/2 tbsp castor sugar
2 cups buttermilk
1 egg, lightly whisked
butter, maple syrup and bacon (try Organic Meat Products' nitrate and sugar-free bacon), to serve
Here's how
Combine the dry ingredients in a bowl and whisk in the buttermilk and egg. Do not over-mix.
Heat a non-stick frying pan over medium heat. Ladle batter into pan to form pancakes and cook til golden each side.
In a separate, moderate-hot non-stick pan, cook your bacon. Cook in batches to ensure it does not sweat and go soggy.
Serve your pancakes with butter, maple syrup and the crispy bacon.
