Chilli and tamarind prawns

Aussies love their prawns. Here's a mouthwatering prawn recipe to add to your repetoir.

One of my favourite seafoods is the prawn. I just love them.

Nutritionally, prawns provide numerous health benefits, just be mindful of the high sodium and cholesterol content. 

Pair them with one of the most highly prized natural foods in south Asia, the tart tamarind, and you get a dish that is mouthwatering and out of this world

For a cook time of approximately 40 minutes, this dish does not disappoint. Serves two.

Chilli and tamarind prawns

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 large garlic cloves, crushed
  • 1 long green chilli, seeds removed, chopped
  • 800g chopped tomatoes
  • 1.5 cups (375ml) Massel chicken-style liquid stock
  • 1 tablespoon fish sauce
  • Zest and juice of 1 small lime
  • 1 lemongrass stalk (inner core only), finely chopped
  • 1 kaffir lime leaf, finely shredded
  • 3 spring onions, thinly sliced
  • 2 teaspoons tamarind paste 
  • 1/2 bunch coriander, leaves finely chopped, plus extra leaves to serve
  • 1kg green peeled prawns
  • Method

  • Heat 1 tablespoon oil in a large deep frypan over medium heat.
  • Add onion, garlic and a pinch of salt. Cook, stirring, for 4-5 minutes until soft.
  • Add the chilli, tomato, stock, fish sauce, lime zest and juice, lemongrass, kaffir lime leaves, spring onion, tamarind and coconut milk, then stir to combine.
  • Cook for 20 minutes.
  • Stir in the coriander and prawns
  • Then season and cook for a further 3-4 minutes until prawns are just cooked.
  • Sprinkle the extra chilli and coriander over the prawns
  • Serve with steamed rice and lime wedges to squeeze over in case you find it too spicy.
