But why is it so good for you?
As with all fish, salmon is nutrient dense. It is an excellent source of high-quality protein, vitamins and minerals (including potassium, selenium and vitamin B12).
But it is the presence of omega-3 fatty acids that receives the most attention, and rightly so. It is this essential fat that is responsible for oily fish’s reputation as a valuable brain food.
And couscous, while technically a grain, is actually more like pasta (this combination of semolina wheat and water). So it stands to reason that wholewheat couscous is the most nutritious variety. It contains five to six grams of fibre per serve, which can help you meet the recommended daily intake.
Couscous has a mild flavour, which makes it extremely versatile. It works well with different flavours, both sweet and savoury.
So add some vegetables and flavourings such as garlic and chilli, and you have a wonderful, quick, nutritious dish that is sure to impress.
This salad takes about 15 minutes to prepare and serves 2 people.
